Perfect French Fries

To make crispy French fries using a vegetable slicer, start by washing and peeling four large potatoes, preferably yellow-fleshed or russet. Use the vegetable slicer with the julienne disc to obtain thin sticks. Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and dry them well.

Heat the oil in a deep fryer or skillet to 160°C and fry the chips in small batches for 3-4 minutes, until lightly browned. Remove the chips from the oil and drain on paper towels. Then, increase the oil temperature to 180°C and fry the chips again for 2-3 minutes, until golden and crispy. As soon as you remove the chips from the oil, sprinkle them with salt and spices to taste while they are still hot, so the seasonings stick better.
