Interviewer: Chef, how important is it to have a professional slicer in the kitchen?

Chef Rossi: The importance of a professional slicer in the kitchen is fundamental. A good slicer not only allows you to obtain uniform and precise slices, but also helps maintain the consistency and flavor of the ingredients. This is especially important when working with high-quality products such as cured meats and fine cheeses.

I: How does the quality of the cut affect the dishes served to customers?

Chef R.: The quality of the cut is essential for the presentation and taste of the dish. Thin and uniform slices allow for a homogeneous distribution of flavors, improving the gastronomic experience. For example, in the case of a beef carpaccio, a cut that is too thick would compromise the delicacy of the dish, while a professional slicer allows you to obtain thin and translucent slices that melt in your mouth.

I: Can you tell us a concrete example in which the use of a professional slicer improved a dish?

Chef R.: Of course. Let's take raw ham for example. When sliced correctly, with a uniform thickness, each slice retains the right amount of fat and meat, enhancing the flavor and texture. Once, during an important event, we used a Fac professional slicer to prepare bruschetta with ham.
